
This is an ice-cream bread sandwich in the style I would eat as a child. In Thailand bread (Kanom Pan) isn't a staple eaten with the main course, more commonly it is sweet and eaten as a treat or a dessert. The bread in this sandwich should be the sweetest brioche style bread you can find, if you can't find sweet bread, use scones instead. Try making the Thai coconut ice-cream from the recipe on this site for a more authentic result.
Ingredients
for 1
3 Small Scoops of Coconut Ice Cream
1 Sweet Bread Roll
2 Tablespoons Condensed Milk
1 Tablespoons Chopped Almonds
Preparation
1. Cut the bread in half.
2. Place 3 scoops of icecream down the length of the roll.
3. Sprinkle on the chopped almonds.
4. Drizzle a little condensed milk over the top.
5. Decorate with fruit, or sugar sprinkles or whatever you like.

My Indonesian dad would eat such a concoction anytime he got his hands on some type of sweet bread from an American or Asian grocery ("Philippine bread", potato bread or Challah-like eggy bread). Sometimes he would just get a plain white hot-dog roll. Since I grew up in the USA, I thought he was crazy for eating his ice cream in a bread roll (especially since he loved to add kidney beans and condensed milk). Now I love this combination (without the kidney beans). Instead of crushed peanuts, I spread organic crunchy peanut butter on the rolls, add ice cream (today I had Haagen Dasz's Swiss Almond and Toasted Coconut Sesame Brittle), then add thick dollops of Nutella... I'm glad I came upon your site. I haven't found many blog postings about South-East Asian ice cream "sandwiches." It would be good to know the official name for such a dessert for each country. What is it called in Thailand?
