Grass Jelly ( Choa Guay )

Thai recipe name pronunciationA gelatine like substance made from a herb that comes in packets and more commonly in tins like the brand in the photograph. It is vegetarian (unlike gelatine), and does not dissolve if you put it into hot liquids. We eat it in hot and cold desserts.
