Quails Eggs, Perfect Carny Food


It's festival time in Talang, Phuket, and it's often so easy to overlook one of the simplest and yet tasty festival foods... fried quails eggs garnished with Maggie sauce and a dash of white pepper.

You don't have to wait for carnivals to eat these, beer nights in front of the television are the perfect time for this snack too!

1 Dozen Quails Eggs
A Dash of Maggi Sauce
White Pepper
Shredded Cabbage to serve

Preparation For Rice Soup
1. What could be simpler, fry the quails eggs in a mini-pancake pan. In Thailand we use a Khanom Krok pan usually.
2. You want the eggs yolks soft but not runny, and the whites cooked through.
3. Serve on a bed of shredded cabbage, a dash of maggie sauce, the sauce really is essential, and optionally a good sprinkly of ground white pepper.
4. Eat warm.
