Palm Sugar Cakes ( Nam Tan Buk )

Thai recipe name pronunciationPalm sugar is impure sugar made from sugar palm. It is easiest to buy and store as sugar cakes (as in the photograph). When you need some sugar simply tap the cake with a Thai Wooden Pestle to break off pieces.
As with other sugars, keep it dry in an airtight container and it will last for years. If you cannot obtain palm sugar substitute brown sugar or sugar molasses to achieve a similar heavy burnt sugar flavour.
