Tapioca Pearls ( Sa Ku )

Thai recipe name pronunciationTapioca pearls are starchy balls made from processed cassava starch. When cooked they form a chewy textured ball, you may be familiar with tapioca pudding, but we use them differently in Thailand for desserts and snacks and in some drinks.

In the photograph you can see a packet of tapioca pearls bottom right (a common Chinese brand), together with a bowl of tapioca pearls.
