Makhuea Pra (Thai Aubergine)

Thai recipe name pronunciationThailand has many many aubergines, this plant is seasonal, grows about knee height, and the aubergines are 4-5cms across. It is used in receipes such as Fried Red Curry Pork and also in soups. If stored in the fridge they will last approximately 1 week, they don't freeze well, and will go brown if cut.
