Thai Bitter Melon ( Ma Ra Koom )

Thai recipe name pronunciationThis Thai melon can be easily recognised from it's knarled surface, it has a bitter taste and is used to add a bitter note to soups with meat. When cooking with it, scoop out the seeds and pith from the centre.
