
Green eggs and ham, well green curried pork wrapped around quails eggs to be more precise. These are another great dish to serve with rice. Typically in Thailand we'll have 3 or 4 dishes like this served as flavour dishes to add to the rice.

8 Quails Eggs Boiled & Shelled
120 gms Chicken or Pork Mince
1 Tablespoon Green Curry Paste
1 Tablespoon Coconut Milk
A Pinch Of Salt
2 Teaspoons Sugar
Preparation
1. Mix the pork mince, green curry paste, coconut milk, sugar and salt together.
2. Split the mixture into 8 equal portions and wrap it around each egg.
3. Steam for 10 minutes to cook.

looks and sounds yum! but I am a bit confused. You have mentioned "...Green eggs and ham, well green curried pork wrapped around quails eggs to be more precise..." and you require chicken for the ingredients. I guess I'll vote for chicken. Thanks for sharing anyway.

Chicken mince was a last minute substitution when I found I was out of pork. It spoiled the title though. :) It works with either mince, pork is best for this since it holds its flavour against the curry.

what is the easiest way to wrap the eggs & have a smooth finish
[Appon] If you oil your hands and smooth it off with your fingers, it's quite easy.
